کباب کوبیده · The soul of Persian grilling

Koobideh

What is Koobideh?

Koobideh is Persia's signature kebab: minced lamb and beef, kneaded with grated onion until sticky, pressed by hand onto a wide flat skewer and grilled over charcoal. No egg, no breadcrumbs — the meat holds together through technique alone.

Why it takes skill

The mixture must be kneaded until pale and tacky, the onion squeezed bone-dry, the meat pressed to an even thickness with sealed ends. One mistake and the skewer falls into the fire. Grill masters train for years.

The charcoal difference

Real charcoal burns hotter and drier than gas, sealing the surface in seconds while the fat inside bastes the meat. The smoke is not a side effect — it is an ingredient.

How it is served

On fluffy saffron rice with a knob of butter, a charred tomato, and a generous dusting of sumac. The rice soaks up the juices — leaving any behind is the only real mistake you can make.

“Koobideh is not a recipe. It is a craft you learn with your hands.”
